7 Things Kentucky Waffle House Regulars Order That Aren’t on the Menu Board

Waffle House’s store directory lists restaurants in 34 Kentucky cities, from Paducah to Ashland.

The yellow menu board looks about the same in all of them, but the kitchen cooks a fair amount that the board never lists.

The regulars know the difference.

These are the things Kentucky Waffle House regulars order that aren’t on the menu board.

1. Steamed Hashbrowns

Waffle House will steam an order of hashbrowns instead of searing them, and the board never says so.

The Atlanta Journal-Constitution’s guide to the chain’s hashbrowns lists four ways the kitchen cooks them: Plain in oil, seared well, steamed with ice, or cooked dry.

Steamed is the method that surprises people.

The cook drops the shredded potatoes inside a metal ring on the grill, adds ice, and lets the steam soften them instead of crisping the edges.

The crunch never comes.

You get a softer, milder pile of hashbrowns that holds onions and cheese without going crunchy underneath.

Ask for them steamed, and the cook knows what you mean.

2. Grits All the Way

Waffle House lists Grits, Cheese Grits, and a few grits bowls on its menu.

The kitchen doesn’t stop there.

The Takeout reported in 2024 that the chain said on its social accounts that any hashbrown topping can go on a bowl of grits.

Each topping adds a small charge.

That means smothered grits, covered grits, peppered grits, or the whole lineup at once.

Southern Living put a large order of grits, all the way, on its list of what Southerners order at Waffle House.

Chili and sausage gravy on grits, with onions and cheese underneath, sounds like a dare.

Regulars call it breakfast.

3. Dark Waffle

Waffle House cooks will leave a waffle in the iron longer if you order it dark, and the kitchen has a code for it.

The chain’s training video on plate marking, reported by Nexstar stations in 2023, centers on a mayonnaise packet.

An upside-down mayo packet placed near a butter packet means a light waffle, and a right-side-up packet on its own means dark.

The chain’s public relations director told Nexstar the system is fast and easy to learn.

A dark waffle comes out firmer and browner at the edges, with more crunch than a waffle cooked the standard way.

The menu lists four waffle flavors.

Doneness never made the list.

Tasting Table’s 2025 rundown of the chain’s off-menu orders singles out the dark waffle as the request regulars know to make, and cooks know to fill.

4. Egg on the Chicken Sandwich

Waffle House posted this order on its Instagram account: The Grilled Chicken Bacon Cheese Sandwich Deluxe with no lettuce, no tomato, and a sunny-side-up egg on top.

The post drew a wave of comments from fans eager to order it themselves, the kind of response Waffle House rarely gets for a sandwich already on the menu.

Tasting Table wrote it up in March 2025 and priced the extra egg at 50 cents at a Savannah, Georgia store.

Waffle House sells the sandwich with lettuce and tomato, and the sunny-side egg is the part that never made it onto the board.

The board leaves out the sunny-side version.

The yolk runs down into the chicken and bacon, and the write-up’s advice is to push your hashbrowns through what’s left on the plate.

Fifty cents for the yolk.

Naming the sandwich in full is what gets a sunny-side egg instead of a shrug.

5. Hashbrowns Cooked Well

Order hashbrowns well, or well-done, and a Waffle House cook sears them past the usual golden stage.

That’s the second of the four cooking methods in the Atlanta Journal-Constitution’s guide, sitting between plain and steamed.

Eat This, Not That’s food writer found that well and extra crispy mean the same thing to a Waffle House cook.

On that visit, the server asked if she wanted the bacon extra crispy too, before she’d even brought it up.

Crispy travels together.

The board prints regular, large, and triple.

It never says how long they stay on the grill.

Waffle House’s Hashbrown Math

Waffle House says there are 1,572,864 ways to order its hashbrowns, a figure the Atlanta Journal-Constitution traced back to the chain.

The count folds in four cooking methods, three sizes, and a long list of toppings a customer can add or leave off.

Sizes and toppings are the half that’s on the board.

The cooking methods are the part you have to ask for.

They’re the part that separates a regular’s plate from a first-timer’s.

6. Double Ds Hash Browns

Waffle House will build an order regulars call Double Ds: Two hash brown rings, each topped with a sunny-side-up egg, with a curved strip of bacon tucked underneath.

Cheapism’s rundown of the chain’s secret menu says the arrangement is built to look like a smiling face on the plate.

Breakfast with a face.

It isn’t a combo you’ll find on the board.

The name is the whole order.

Regulars don’t have to list the parts.

7. Raisin-Toast Breakfast Sandwich

Waffle House lists its breakfast sandwiches with a choice of white, wheat, or Texas toast, and raisin toast isn’t one of the three.

The board sells raisin toast on its own, two slices at a time, under the sides.

The chain’s social accounts put the two together: A sausage, egg, and cheese sandwich built on raisin toast instead of the sandwich’s usual bread.

Tasting Table’s February 2026 write-up adds one step: Ask for the bread grilled rather than toasted so the edges caramelize on the flat top.

Waffle House posted the sandwich itself, and it’s a swap the kitchen has already seen.

Packet Code Behind Your Order

Waffle House cooks work a rush by reading plates, not tickets.

The server calls the order, and the cook marks the plate with condiment packets that spell out the rest.

A jelly packet standing at the bottom of the plate means scrambled eggs, and the same packet moved to the top means sunny-side up.

A butter packet tucked under the jelly means dry toast.

Ketchup laid across the middle means a sirloin, and where it sits carries the temperature.

The waffle mark carries a second condition: A light waffle needs the mayo packet upside down near a butter packet.

That butter packet also has to sit on the cook’s board instead of a plate, or the mark doesn’t count.

The system started with the chain’s early cooks and grew into formal training as the menu grew, according to the Nexstar report.

Waffle House’s directory lists Kentucky stores in 34 cities, from Paducah to Ashland, and the same marking system runs through every one of them.

Nobody hands you a copy.

The system runs whether or not the customer at the next table ever notices it.

Waffle House doesn't cook everything that goes viral on somebody's phone.

In January 2023, an Atlanta-area store taped up a handwritten sign telling customers to order from the menu because the kitchen wasn't making anything they'd seen on TikTok.

Corporate didn't comment.

Waffle House never confirmed whether the sign worked, and copycat videos of the same waffle sandwich kept surfacing anyway.
